It has come to our attention that many people living the Paleo lifestyle do not have a clear line which nuts and vegetables they can eat. First of all, vegetables are ALL Paleo! But, not all nuts are Paleo. Peanuts are the biggest Paleo liar. Instead of reaching for peanuts, reach for cashews or hazelnuts.

Turkish Zucchini Fritters
1 1/2 cups of grated zucchini
1/2 teaspoon of kosher salt
1/2 cup of almond flour
1/4 cup chopped scallions
1/8 cup chopped onions
Sprinkle of dill and parsley
Combine grated zucchini and salt and let it sit for approx. 30 minutes and squeeze dry afterwards. Once time is up, mix with the remainder of the ingredients. Once each zucchini is nicely breaded, shallow heat olive oil in a medium sauce pan. Fry them in olive oil until they turn a golden brown. Serve with garlic ghee or Paleo ranch and enjoy!
